Healthy Banana Bread Muffins
There are an endless number of banana bread recipes but I kept coming back to this particular recipe time and time again. There is significantly less sugar and butter in this recipe compared to most, but trust me, you won’t even notice.

To make Healthy Banana Bread Muffins, you will need…
3-4 ripe bananas, mashed
2 tablespoons granulated sugar
3 tablespoons light brown sugar
1 teaspoon vanilla extract
1 egg
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cup all purpose flour
2 tablespoons unsalted butter, melted
Preheat your oven to 350 degrees F. Line muffin tin with 12 liners.
Using a hand mixer, combine mashed bananas, granulated sugar, brown sugar, vanilla, egg, and cinnamon. In a separate bowl, sift flour, baking soda, baking powder, and salt. Add dry mixture to wet banana mixture and mix until just combined. Finish with mixing in melted butter.
Using a cookie scoop, fill each muffin tin with ~2 scoops of batter. Optional to add mix-ins including chocolate chips or chopped nuts.
Bake for 20-25 minutes. Allow muffins to cool s lightly in the pan before removing and finish cooling on a wire rack.
Store at room temperature in an air tight container.
